Lemon and Coriander Hummus

A fresh and tart variant of the classic hummus with lemon and fresh coriander that takes less than 10 minutes to make.

Ingredients:

1 Can chickpeas (net weight 255g)

1 Unwaxed lemon, washed thoroughly

6-7 Stalks of coriander

2 Tablespoon olive oil

1 Tablespoon Tahini

1/2 Teaspoon cumin

1/2 Salt

Total time: 10 minutes

Chop the complete coriander stalks roughly (most of the taste is in the stalks, so don’t waste them). Set about one tablespoon of chopped leaves aside. Squeeze the lemon juice and grate about one teaspoon of the zest finely. Be careful to only use the yellow part of the peel as the white layer underneath is very bitter. Combine drained chipeas, olive oil, tahini, lemon juice and zest, coriander, salt and cumin in a bowl. Blend until smooth and season to taste with salt, cumin and lemon juice. For a smoother texture, add some cold water.

  6. Garnish with the corander leaves you set aside earlier.
  7. For a smoother texture, add some cold water.
