Easy Vegan Gravy with Marmite

An easy to make vegan sauce with marmite and soy sauce.

Ingredients for 2 portions:

1 Small shallot

2 Tablespoons flour

250 ml Vegetable stock

1 Tablespoon soy sauce

1 Tablespoon vegetable oil

1 Clove Garlic

1 Teaspoon Marmite

Chop the Shallot fineley and crush the garlic. Heat the oil in a small pan on low heat, add the shallot and fry for 5 minutes. Add the flour and continue to cook for 10-15 minutes, stirring frequently, until the flour and onion begin to turn brown and soft. Add the garlic and cook for further 1-2 minutes. Pour in the vegetable stock bit by bit, stirring continuously. Bring to boil and simmer for 10 minutes, then add the Marmite, soy sauce and salt and pepper to taste.
