Christmastree Cookies with Matcha-Spinach Glaze

Sweet vanilla cookies with a slightly tart green glaze made with spinach and matcha.

Ingredients for 16 cookies:
For the cookies:
100 g Caster sugar
150 g Margarine
300 g Flour
1 Sachet bourbon vanilla aroma
For the glaze:
4 Tablespoons water
250 g Confectioner’s sugar
1.5 Teaspoons matcha powder
50 g Spinach
Total time: 2.5 hours (including resting time for dough)

Combine the caster sugar, margarine, flour and vanilla aroma and form a dough. Knead for 4-5 minutes, until the dough is smooth and even. Shape into a ball, wrap in cling film and let it rest in the fridge for at least 1.5 hours or over night.
Once the dough has rested, preheat the oven to 200° Celsius / 400° Fahrenheit. Take the dough from the fridge and carefully roll out using a rolling pin. Use a small, round cake pan (diameter 15 cm / 6″) to cut out two round pieces of dough. Bake for 20-25 minutes, until they start to turn light brown. Remove from the oven and cut each circle into 8 pieces like you would do with a cake. It’s important to do this right after baking because the dough is still soft. Let cool completely.
For the glaze, heat the spinach and water in a small pan and let simmer for for 3-4 minutes. Add the matcha powder and stir, then blend the mixture until smooth. Add the confectioner’s sugar and sit with a whisk until completely smooth. Spread the glaze over the cookies, decorate as desiered.
