Red Lentil Curry Soup with Tomatoes and Coconut Milk

A super-easy and delicious soup with red lentils, curry paste, coconut milk and chopped tomatoes.

Ingredients for 2 portions:

100 g red lentils

1 can chopped tomatoes (400 g)

80 ml coconut milk

1 thumb-sized piece of ginger

1 red chili

25 g red curry paste

500 ml vegetable stock

1 tablespoon dark soy sauce

Juice of 1/2 lime

2 tablespoons chopped coriander (optional)

Time: 35 minutes

Peel the ginger and cut it into 3-4 thick slices. Cut the chili in half, remove the seeds and cut in half again. Place ginger, chili, red lentils, coconut milk, curry paste and vegetable stock in a pot. Bring to boil and simmer for 30 minutes. Once the soup is done take the pot off the stove and remove the  ginger and chili. Add soy sauce and lime juice to taste and serve garnished with coriander.
