Tomato Bruschetta with Roasted Garlic

A super-easy recipe for marinated tomatoes with oven-roasted garlic and basil on crispy bread slices.

Ingredients for 2 portions:

200 g Cherry tomatoes

1 Tablespoon olive oil

1 Tablespoon Balsamic vinegar

1 Clove garlic

1/2 Ciabatta or baguette

4-6 Basil leaves

Salt and pepper to taste

Total time: 30 minutes

Cut the cherry tomatoes in quarters, mix with the olive oil, balsamic vinegar, some salt and pepper and set aside for at least 20 minutes – the longer, the better.

Preheat the oven to 200 ° Celsius (400° Fahrenheit), bake the bread and garlic clove with the skin on for 10 minutes. Remove the bread beforehand if it turns too brown. Cut the bread into slices. Squeeze the softened garlic clove from the peel, mix with the tomatoes and spoon on top of the bread, then garnish with basil and serve.
