Chunky Sweet Potato Fries

Oven-baked sweet potato fries with a spicy coating.

Ingredients for 2 portions:

1 Sweet potato, circa 350-400 g (I used a purple one for the interesting colour)

1 Tablespoon Olive oil

1 Teaspoon Smoked Paprika

1/2 Teaspoon Cayenne pepper

1/2 Teaspoon Turmeric

2 Tablespoons Chickpea Flour

Salt & Pepper

Total time: 40 minutes

Preheat the oven to 175° Celsius (350 ° Fahrenheit). Peel the sweet potato and cut into chunky fries in the desired size. Place them in a freezer bag. Add the olive oil, spices and some salt and pepper and distribute by kneading the bag with your hands. Sprinkle two tablespoons of chickpea flour on top and distribute again by moving the potaotes inside the bag around. Place the fries on a baking tray and make sure they don’t touch. Bake for 25-30 minutes.
