Chocolate-Pear-Crumble Cake

A rich, vegan chocolate cake topped with sweet, juicy pears and a crispy crumble layer.

Ingredients for a small cake tin (11 cm / 4.5 inches):

For the cake:

50 g (1/2 cup) Whole wheat flour

125 g (1 cup) Regular flour

30 g (1/4 cup) Cocoa powder

125 g (2/3 cup) Caster sugar

2 Teaspoons Baking powder

A pinch of salt

250 ml (1 cup) Soy milk

1 Ripe banana

2 Tablespoons oil

2 Pears

For the crumble:

50 g (1/2 cup) Whole wheat flour

50 g (3 Tablespoons) Margarine

50 g (1/2 cup) Caster sugar

Total time: 45 minutes

For the crumble, combine 50 grams each of wholewheat flour and caster sugar in a small bowl. Add 50 grams of margarine by rubbing it to small bits between your fingers and mixing it with the sugar and flour. The result should be a crumbles with a relatively even size, smaller than peas. But the bowl in the fridge until needed. Peel the pears, de-seed and cut them into small pieces, then set aside.

Preheat the oven to 175° Celsius (350° Fahrenheit). For the cake batter, combine the remaining sugar, flour, cocoa powder, baking powder and salt in a large bowl and mix well. Blend the banana, soy milk and oil until very smooth. Add the mixture to the dry ingredients and combine using a large spoon or electrix mixer with paddle attachments. Pour the cake batter into a small cake tin, add a layer of pear pieces and cover with the crumbles. Bake for 30 minutes or until the crumbles turn golden-brown.
