Spicy Red Lentil Soup

A quick and filling red lentil and tomato soup with chili and ginger.

Ingredients for 2 portions:

1 Shallot

1 Stalk celery

1 Carrot

1 Red chili

1 Tablespoon oil

100 g Red lentils

1 Can chopped tomatoes (400 g)

600 ml Vegetable stock

1 Small piece of ginger (about 2 cm)

Total time: 30 minutes

Chop the shallot, carrot, celery and chili finely. Peel the ginger and chop it into 3 even pieces. Heat the oil in a medium sauce pan and fry the shallot and carrot for 3-4 minutes, then add the celery and chili and fry for further 2-3 minutes, until the vetegables begin to soften. Add the red lentils, chopped tomatoes, vegetable stock and ginger and simmer for 20 minutes. Remove the ginger and stir well before serving.
