Pizza Bread with Cherry Tomatoes

Small pizza loaves with fresh barbs and cherry tomatoes that make a lovely addition to Italian salads or brunch buffets.

Ingredients for 2 small loaves:

100 g Flour

1 Packet of dried yeast (7g)

75 ml Cold water

1/2 Teaspoon salt

1 Tablespoon oil

1 Small Onion

200 g Cherry tomatoes

1 Tablespoon each fresh oregano and basil leaves

Combine flour, yeast, salt and water in a mixing bowl. Knead for about 5 minutes, until the dough is smooth and elastic. Cover with cling film and leave to rise in a warm location for at least one hour.

Cut cherry tomatoes in half, chop oregano and basil and cut the onion into rings. Heat the oil in a small frying pan on high heat, add the onion rings and fry for 5 minutes, until they are brown and crisp.

Once the dough has rested for an hour and has doubled in size, preheat the oven to 200° Celsius (400° Fahrenheit). Add the onion rings and herbs to the dough and knead gently to distribute them. Divide the dough into halves and form two flat, oval loaves, about 1 cm (0.5 inches) high. Make diagonal incisions using a knife, then distribute the cherry tomatoes with the cut facing upwards onto the loaves and press them down gently. Bake the pizza bread for 15-20 minutes, until they turn light brown and the cherry tomatoes begin to look a bit wrinkly.
