Vegan Orange and Thymes Cookies

Orange & Thymes Cookies

Sweet and tangy cookies with both orange zest and  juice with hint of fragrant thymes.

Ingredients for 10 cookies:

125 g Margarine

75 g Caster sugar

75 ml Maple syrup

Juice and zest of 1 orange

1 Tablespoon Chia seeds

1 Tablespoon fresh thyme leaves

175 g Flour

50 g Amaranth (optional, can be replaced with 50 g flour)

1/2 Teaspoon Baking powder

1/2 Teaspoon Salt

Total time: 45 minutes

Combine the orange juice and chia seeds in a small bowl and set aside. Preheat the oven to 170 Degrees celsius (325 degrees Fahrenheit) and line a baking tray with baking paper. In a medium bowl, combine the flour, amaranth, baking powder and salt and mix well. In a second bowl, using an electric whisk, mix the margarine and sugar until it turns creamy and soft. Add the Maple sirup, orange zest, orange juice with chia seeds and thymes, then continue whisking until smooth. Add the dry ingredients in two batches and mix it into a dough either by hand or using a large spoon. Shape the cookie dough into a balls, using bout 2 tablespoons of dough foe each, place them on the lined the baking tray and flatten them into disks. Make sure to leave a little room between the cookies, about 3.5 cm (1.5 inches) since they will spread a bit. Bake the cookies for 20-25 minutes, then allow to cool in the oven for about 10 minutes before transferring them to a cake rack to let them cool completely.
