Pasta oven roasted tomatoes

Pasta with oven-roasted
cherry tomatoes and thyme

This is a very simple recipe which takes hardly any work, just some time and patience while the cherry tomatoes are roasted in the oven at a low temperature which gives them a lovely, intense flavour

Ingredients for two portions:

300g cherry tomatoes

4-5 sprigs thymes

1 tablespoon olive oil

salt

pepper

250 g linguine or spaghetti

Time: 1 hours, 30 minutes

Preheat the oven to 100° Celsius (212° Fahrenheit)

Cut the cherry tomatoes in half and place in an ovenproof dish, facing up. Add salt, pepper and drizzle olive oil on top. Remove the thyme leaves from the sprigs and sprinkle on top.

Bake the tomatoes in the oven for one hour, or until they begin to look wrinkly and turn a little  brown on the edges.

While the tomatoes are in the oven, cook the Pasta according to packet instructions and mix with the tomatoes once they are done.
