Coconut-Chocolate-Snowballs

Cute seasonal cakepops with desiccated coconut, coconut milk and vegan white chocolate.

Ingredients:

200 g Flour

1/2 Sachet baking powder

100 g Desiccated coconut

125 g Caster sugar

125 ml Neutral vegetable oil

160 ml Soy milk

80 ml Coconut milk

200 g vegan white chocolate

20-25 Paper cases for pralines

Preheat the oven to 180° Celsius / 360 ° Fahrenheit. Mit flour, baking powder, sugar and 15 g of the desiccated coconut in a bowl. Fill oil and soy milk into a measuring cup, they doin’t have to mix. Add the liquid to the dry ingredients bit by bit and combine using an electric mixer until smooth and creamy. Fill into a small cake pan (diameter 15 cm / 6″) and bake for 40-45 minutes. Remove from the oven and let cool.

Once the cake has cooled complelety, crumble into a large bowl. Add the coconut milk and combine using your hands. Form balls of about 2.5 cm (1″) diameter and place on a wooden board. Freeze for at least half an hour – this makes the balls easier to handle.

Once the balls are frozen slightly, remove them from the freezer. Distribute the remaining desiccated coconut on a large plate and set out enough paper cases for the snowballs. Fill a medium sauce pan  with water, about 2/3 full and bring to a simmer. Crumble the vegan chocolate into a small saucepan, place it in the simmering water and stir until the chocolate has melted.

Dip each snowball in the chocolate using two forks, then roll in the desiccated coconut to cover and place in paper cases.
