Lambs Lettuce with Smoked Tofu and Mushrooms

A light but hearty starter salad.

Ingredients for 2 portions:

2 Tablespoons oil

200 g Chestnut mushrooms

1 Shallot

2 Teaspoons sugar

6 Tablespoons balsamic vinegar

100 g Smoked Tofu

100 g Lambs Lettuce

Salt Pepper

Total time: 20 minutes

Cut the mushrooms into slices and the shallot into thin rings, cube the tofu. Heat one tablespoon of oil in a frying pan on very high heat. Fry the mushrooms for 3-4 minutes until they turn slightly brown, then remove from the pan and set aside. Return the frying pan to the stove, reduce the heat to medium and add the remaining tablespoon of oil and the onion rings. Fry the rings until they begin to soften, then add the sugar and let it caramelise for 1-2 minutes. Then add the smoked tofu and fry for 3-4 minutes, stirring frequently. Add the balsamic vinegar then turn off the heat, return the mushrooms to the pan and add salt and pepper to taste. Leave the pan on the stove to with the heat off to reduce the balsamic vinegar. Arrange the lambs lettuce on plates, top with the tofu and mushroms mixture and liquid from the pan. If there’s very little liquid, drizzle a little more balsamic vinegar over the salad.
