Couscous Salad with Avocado and Chickpeas

A scrumptious couscous salad with a tangy mix of spices, fresh vegetables, avocado and chickpeas.

Ingredients for 2 portions:

100 g Dry couscous

1/4 Teaspoon each of chilli powder, dried thymes, dried ginger

1/2 Teaspoon each of turmeric, mild curry powder, cumin, smoked paprika

100 ml water

1 Avocado

1 Can chickpeas

200 g Cherry tomatoes

1/2 Cucumber

1 Hand full parsley leaves

1 Tablespoon olive oil

Juice of 1 lemon

Salt & pepper

Total time: 15 minutes

In a large bowl, mix the couscous and spices. Pour over 100 ml of boiling water and set aside. Peel the avocado and remove the pit. Cut the cucumber in half lengthwise and deseed. Slice the cucumber, cut the avocado into small cubes and the cherry tomatoes in halves. Drain the chickpeas and chop the parsley. Combine everything with the couscous, add the olive oil and lemon juice and mix well. Add salt and pepper to taste and serve or keep refrigerated until serving.
