Colourful Quinoa Salad with Mango

This colourful salad with quinoa, mango, red cabbage, peppers and broccoli is a joy for the eyes as well as the taste buds.

Ingredients for 2 portions:

100 g Quinoa

100 g Broccoli

1/2 Mango

150 g Red cabbage

1 Red bellpepper

3 Tablespoons dark soy sauce

2 Tablespoons white wine vinegar 

Juice of 1/2 Orange

2 spring onions

Total time: 30 minutes

Boil the quinoa according to packet instructions and set aside to cool. Divide the broccoli into small florets and boil for 3-5 minutes, until tender, then rinse with cold water and set aside as well. Peel the mango and cut into small cubes, deseed the pepper and cube as well. Slice the red cabbage and spring onion into thin strips. Mix the vegetables and mango with the quinoa once it has cooled. For the dressing, mix the soy sauce, vinegar and orange juice and pour over the salad just before serving.
