Bruschetta with Balsamic Mushrooms and Avocado

Slices of Italian white bread with a mixture of tart, balsamic fried mushrooms and cubes of creamy avocado, perfect for brunch or as a snack to accompany a glass of wine.

Ingredients for 2 portions:

1/2 Ciabatta or baguette 

250 g Button mushrooms

1 Avocado

1 Shallot

1 Tablespoon oil

3 Tablespoons white balsamic vinegar 

Salt

Pepper

Total time: 20 minutes

Cut the ciabatta into diagonal slices, about 1 cm (0.5 inches) wide and bake in the oven at 200° Celsius (400° Fahrenheit) for 5-8 minutes until crispy and slightly brown on the edges. Cut the mushrooms, shallot and peeled avocado into cubes. Heat the oil in a medium frying pan on high heat and fry the mushrooms for 3-4 minutes. When the mushrooms begin to turn light brown, add the cubed shallot and  fry for further 2-3 minutes. Pour the balsamic into the pan, add salt and pepper and let reduce for 2 minutes. Take the pan off the stove, add the cubed avocado, mix and leave for one minute to slightly warm up the avocado, then distribute the mixture on top of the ciabatta slices and serve.
