Black Bean Burger

Black Bean Burgers with Tomato Salsa

A hearty black bean and tofu burger served with a fresh tomato salsa.

Ingredients for 4 burgers:

For the salsa:

200 g Cherry tomatoes

Juice of 1/4-1/2 lime

1 Tablespoon Coriander leaves

1 Red chili

Salt & Pepper

For the burger patties:

1 Can black beans 

200 g Firm tofu

2 Tablespoons Tomato Puree

2 Tablespoons soy sauce

1 Teaspoon Turmeric

1 Teaspoon Smoked paprika

50 g Chickpea flour

25 g Breadcrumbs

Salt&Pepper

1 Tablespoon Oil

For serving:

1 Avocado

4 Lettuce leaves

4 Burger buns

Total time: 30 minutes

For the salsa, chop the chili, cherry tomatoes and coriander leaves finely, add the lime juice, coriander and stir well. Add salt an pepper to taste and set aside.

Drain the black beans and tofu and blend in a food processor or using a handheld mixer until combined. Add the tomato puree, soy sauce, spices, chickpea flour and breadcrumbs and stir well. Add salt and pepper to taste. Shape four patties and fry in oil for 5 minutes on each side. Serve on burger buns layered with lettuce, tomato salsa and avocado slices. Goes well with sweet potato fries.
