Green tea and matcha infused banana bread

Banana bread is a great way to use up rippe bananas before they go off. This version balances the sweetness of the bananas with the slightly bitter taste green tea and matcha. 

Ingredients for 1 banana bread / 12 pieces:

300 g Flour

100 g Sugar

1 packet of baking powder

1 Pinch of salt

4 Tablespoon vegetable oil

 

3 Ripe bananas

100 ml Green tea

1 Teaspoon matcha powder

Total time: 1 hour

Preheat the oven to 175° Celsius (350° Fahrenheit). In a large bowl, combine the bananas, sugar an oil. Use a hand mixer to blend and create a smooth puree. Dissolve the matcha powder in the tea, add the liquid to the banana mix and stir well. In a second bowl, combine flour, salt and baking powder an mix well. Then add the flour mixture to the banana puree. Use a cooking spoon to quickly combine all ingredients. The flour should of course be distributed well, however it doesn’t need to be super-smooth and completely free of clumps. It’s much more important to put the bread in the oven as quickly as possible once the baking powder has come into contact with the wet ingredients. Bake the bread for 45 minutes, until golden brown.
